One Minute Flax Meal Muffin

A filling and versatile low carb muffin, ideal as a breakfast accompaniment.

Zutaten

Anleitung

  1. Mix dry ingredients well.
  2. Stir in melted butter and beaten egg.
  3. Pour ingredients into a coffee mug.
  4. Microwave on high for 1 to 1 1/2 minutes.
  5. Muffin should pop out of coffee mug.
  6. Cut and eat with desired filling.

*other ways to enjoy: - slice and eat just a slice or two, or half. - add avocado (not butter or mayo) and a slice of tomato, a sprinkle of feta or goat cheese(or Boursin spreadable cheese! A little goes a long way) - slice thick, cube it, toast it, then use it on soup like I checked the calorie count against my bag of Bob's Red Mill Whole Ground Flax seed Meal as people were saying the recipe was too high in calories or not correct. I added the ingredients as in the original recipe and I came up with about 300 calories using 5 tablespoons of Flax meal. Note regarding eggs - eggs are a an inexpensive, low calorie, high quality source of protein. Most of the nutrition is in the yoke. It's also used as a binder in recipes. If you are allergic or eliminating eggs for another reason I'm sure you already know what you can substitute (maybe applesauce or pumpkin puree). Enjoy! "

I went a step further with this recipe. I add a few drops of vanilla extract, a little extra liquid to thin the batter, then I make pancakes instead of the muffin. I eat it with butter and sugar free maple syrup and a couple strips of bacon. Its a great, satisfying breakfast.

Okay. The good, the bad, and the ugly. First, who measures in grams? Using the carb count, I deduced that it would be 1/3 plus 2tsp of Flax Seed Meal. I cut the Splenda in half. The balance of the recipe was followed to the letter. Unfortunately, my microwave wattage must be far higher than the submitter's. (certainly not their fault). I cooked 60 seconds. Mine turned out like a rock. A decidedly delicious rock, but a rock nonetheless. I think anyone who likes nuts of any kind would fall madly in love with this. Because mine was so hard, I sawed it in half, placed a heated from frozen 0 carb sausage patty from Walmart and made a "sausage sandwich". I bet if I cooked it right it would be great. I served it with 2 eggs fried in olive oil and bacon grease. I'm a waste not want not kinda girl so I ate it. In a few days (after I ascertain it's effect on my scale) I'll try again. After all, I have a whole box of flax seed meal to use up. Here's my plan for the future round. "Pull out when i

Okay, this was awesome. I used 1 tbsp. of butter in mine, added extra cinnamon and SweetLeaf sweetener, and 1/4 tsp. baking powder. I can think of sooo many ways to use this! I had to bang my coffee cup on the counter a couple of times, but the muffin did pop right out.. lol. BTW, 1/4 cup of flax seed meal weighs 100g.

I plan to try these this weekend. The calorie count is kind of high, but I will tweak it a bit and see what I end up with. Seems like a good basis for a lot of different varieties. @DianneGardner...you are certainly entitled to your opinion, but I am sure you wouldn't appreciate members going to the vegan recipes and tell you that you are wrong to be vegan.

Good grief...this recipe will give you a heart attack..go to heartattackproof.com... you guys are just switching seats on the Titanic... this is insane to eat butter and eggs...flax meal is s healthy food..when you combine it with these other killers you only hurt yourself. Go vegan..get away from animal products..get your cholesterol checked..stop eating all oils...plant bease diet strictly...avoid anything processed..avoid all meat, fish, eggs, milk... look at the vegan websites if you want to be healthy..how can you lose weight eating butter and eggs..this is a recipe for a food addict..pure and simple..

I think this receipe has way to many calories, I made it but changed some things and got the calories down to 366 from the 430 or so.

These are amazing!! So easy, quick AND taste great. I've been making these on a regular basis. I use 2 equals. Slice it and pat of margarine and it's great. This weekend I made an egg mcmuffin: sausage, eggs over-easy, lots of cheese melted on. Was delicious. Bought cream chese to see what I can do with that. I'll let you know.

I also used 1/4 cup flax meal. Calories are only has 233 calories and is very satisfying. I'll try toasting it next time.
