In the middle is my copycat recipe of whole foods market's collard greens slaw. Absolutely addictive. I used to pay ridiculous amounts for it at wf, but that was when i had more time than $$. Now the reverse is true. 😁 Again, i am iron deficient so i go cray-cray for those dark greens!

I love salad bars, but I always end up with an overflowing plate. Difficult to have all that variety at home when you live alone.

@fleur, i am at home! I live with a roommate but he won't eat anything green or naturally occurring in nature. But i hear ya, it is a constant battle to eat produce and leftovers before they go bad.

Wow Jen, you've got a fantastic variety there. Yes, the struggle to have variety but no waste is real. Your roommate would have had a hard time growing up in my family's home, almost everything we ate came from my grandparent's farm. LOL!!

That plate is full of good choices.

So many choices & decisions at a salad bar. Great way to try stuff out that you normally wouldn't have at home if you can handle the portion control.
