Yay. I'm back close to my goal weight. Going to stay on track until Sunday then I'm cooking for my SO. Hamburgers, hot dogs, deviled eggs, stuffed jalapenos wrapped in bacon and a green side dish. I plan on making a coconut cream pie for him. Wishing all the Dad's a very happy Father's Day. I lost my Dad last year. If you still have him, appreciate him. Have a great weekend!

Yay for coconut! My wife asked me what kind of cake I wanted for Father's Day so it's going to be a pineapple upside down cake (not flipped), poked with holes like Tres Leches, then soaked with Coco Lopez, whole milk, and heavy whipping cream, then topped with whipped heavy cream, pecans and cherries. I shouldn't eat any of it, but I'll have a little!
