That looks very appetizing, but I have a couple of questions. Being that my hubby & I gave up potatoes for lent, ID think we can have sweet potatoes either. So, IK the roast will be sweeter w/the yams, besides the carrots, but how do they differ from regular Russet/brown/white/pink/etc. potatoes in the calorie/starch/carb/areas? IDK....I'll have to research that....one day. Unless, you guys have the answers?! Enjoy! :-P
