Breakfast for a very late dinner, around 9PM. started off as one thing, went another way as the waffle cooked quicker than the chef was moving. still delicious. I made the waffle with some egg white instead of just water. it was a good change. Super crispy on the outside, soft inside. Cottage cheese, maple syrup (only the real stuff, sorry) and some flax granola on top.
