I know I gained about 3 pounds in the past month but I haven't really been watching what I'm eating. It's been a month of vacations and celebrations. So now, I'm trying to get back on track and make better choices. I made a refreshing arugula salad for lunch today. I added chickpeas, tomatoes, cucumbers, red Bell peppers, and onions, avocados, chopped parsley and mint. I topped it with a little quinoa. I made a Lemon vinaigrette, and it was delicious.
